    How much power for B&W 602 S3s?

would 120 WPC be sufficient to fully exploit thier dynamic capability, or should I go to 200 WPC?

    The amp will be Rotel.

120 WPC should be more than enough. I listened to these speakers several months ago several times and I think the amp running them was a 50wpc Amp. They sounded great.

Consider this -- with those particular speakers, you'll get somewhere around 85 db (which is already fairly loud) at your listening position with just ONE WATT of output from the amp. Going from 125 watts/ch to 200 will not give you much benefit, if any, unless you're trying to go from concert level SPLs up to permanent hearing damage levels.

I just want to be able to egg out the very last bit of dynamics from my speakers without over-taxing the amp.

Speaker positioning, room acoustics, and adding a subwoofer will do a lot more towards that goal than bumping up the wattage ever will. You'll probably blow your speakers before finding the limits of your amp if it indeed delivers a true 125 watts per channel.
