Which sound better 2 way or 3way and which one is the best?

To your question 2 or 3-way really doesn't matter as there are good and bad in both designs. The more times the signal is crossed the more complex the crossover needs to be to do it properly not to degrade the sound. The best center channel is the one that exactly matches your mains in timbre.
