    Your Thanksgiving menu
We're a week away from Thanksgiving. I'm planning to smoke a turkey breast. I've read several recipes and how-to guides, but haven't decided on how I'm going to prep the bird breast yet. Other than that, I haven't planned a menu. What are you guys serving for Thanksgiving dinner? What wine or other beverage will you serve?

Bernd, a former member from across the pond, used to post some quite sophisticated recipes for the holidays. If you have special recipes you bring out for Thanksgiving, post'em here, please.

Wow, that's very ambitious. Where do find rolling papers big enough for that?

Okay, seriously, Canadian Thanksgiving was a month ago and although we offered to make a lovely Thanksgiving meal for my husband's family, they decided that they would prefer to go out for Chinese food. They're kind of dicks that way.

But all was not lost, my brother's family invited us to a lovely turkey dinner, and we split the cooking duties. If I recall correctly the menu was:

    Curried pea soup
Apple slices with homemade pecan pumpkin butter (mine)
    Turkey
    Brown basmati rice
    A regular salad
Green bean and red pepper salad (mine)
Brussel sprouts braised in dijon mustard (mine)
    Fresh fruit
    Apple pie
    Pumpkin pie.

Not the fanciest menu, but a great time was had!

Try the Brussel Sprouts cut in half and steamed with a little butter, slices of fresh apple and a little cinamon

I'm renting from Industrial Bongs of Colorado (IBC). They have a model with a bowl that will hold up to an 8-lb breast. I'll be high 'til Monday.

I would brine (mixture of water, salt and brown suger) the turkey before before smoking it. It will make the meat so much tender. I plan to roast mine as trukey drippings make excellent gravy :)

Ours will be the traditional line up of Turkey/Ham, green beans or some mix veg. stuffing, yams, gravy, cranberry sauce, rolls and Football. Sounds like I will be deep frying the bird (normally I do this on Christmas). We have had a deep fried turkey for either thanksgiving or christmas for the last 8 years. Inject the bird with a cajun spice mix and every bite is juicy and bursting with flavor. The kicker is that it only takes a hour to cook it this way (18-24lb) or less for smaller birds.

No Turkey for us this year. I usually make the Turkey and sweet potato pie but I have to work till 5pm and my daughter will be in Denver. So we are slow cooking a beef tenderloin, sour cream mashed potatoes and brown gravy, bernaise sauce for the beef, yams, rolls, some sort of vege, the sweet potato pie and apple pie. We will have Turkey at Christmas when my daughter comes home form school.
