Non dairy hot chocolate; although I will drink Soy Egg Nog, but never the real stuff. Raw eggs are gross.

Santa? I'm athiest, remember?

The holidays were never a big deal in my house, so I don't really have one.

No tree. Very small house and the Guinea Pig cage is in the only good spot for a tree.

This one will sound silly, but Hubby and I buy a chunk of 6-yr old chedder to nibble on Christmas day.

I also love "Carol of the Bells" in several different incarnations (George Winston's solo piano version and a certain "bell choir" version from a commercial [Sony? I think] come to mind -- that latter one just brings tears to my eyes, it's so beautiful...hey, I should look for it on YouTube...).

FA -- my emotions as I read your post: at first, pleased; then, disbelief (my thought was that you were just being lazy); then a brief spate of humour at your "this is where we differ" comment; then getting creeped out; then relief when we had a few things less in common.

And it's spelled "atheist" -- I before E except after C and when sounding like 'ay' as in neighbour and weigh...okay, it's not covered there, but it's still E-I...

Here you go. The most delicious dessert imaginable.



A classic French dessert, and this version is absolutely divine. The method for the pastry is unusual, to say the least, but it produces a nice crisp, biscuity pastry which is ideal for this type of tart, as well as for fruit tarts. The quantity given will make three tart shells, but you can keep it in the fridge for a few days, or freeze it.



Ingredients
Pastry:
250g butter
175g icing sugar
2 small eggs, beaten
500g flour

Filling:
Zest of 4 lemons and 180 ml of juice
4 large eggs
120g caster sugar
120 ml double cream
icing sugar and lemon wedges to decorate


Method
For the pastry, cream together the butter and sugar till fluffy. Lightly mix in the eggs, then cut in the flour with a spatula. Knead gently for a few seconds to make a smooth dough, then wrap in clingfilm and refrigerate for at least half an hour. You'll need to take it out of the fridge well before you want to use it as it is a bit tricky to handle.


Preheat the oven to 150C/300F. Roll out the dough to about 5 mm thick, and use it to line a 22 cm tin (I used a square one). You can make the sides of the tart double thickness by cutting the pastry an inch bigger all round and folding it down. Make the edges nice and neat though. Prick with a fork, line with greaseprooof paper and weight it down with baking beans. Chill for 20 minutes, then bake blind for 25 minutes on a pre-heated baking tray. Remove paper and beans and return to the oven for 5 minutes. The pastry should be crisp and lightly coloured. Set aside and turn the oven up to 170C/350F.


To make the filling, finely grate the zest from the lemons and squeeze enough juice to give the required quantity. Break the eggs into a bowl, add the sugar and whisk lightly to combine -- not until it's frothy. Then, still beating, add the lemon zest and juice and the cream. Put this mixture in a jug.


Put the pastry case on the baking tray and slide it out of the oven far enough to be able to pour the filling in, carefully. You want it to come virtually to the top of the pastry. Slide the tray back in, and bake for about 30 minutes until the filling is set and just firm in the centre.


Remove from the oven, sift icing sugar over it and caramelise the top under the grill . Serve at room temperature -- you don't need anything with it.

Wow! You just reminded me of something that I totally forgot about! When I was a kid, we never had a tree either. We had a neighbour who was a good friend of my Mom's but about 10 years older. I always thought of her as my surrogate grandmother (although, when I was 5, she was only 45...she seemed much older to me at the time :wink5: ). Her kids were at that age where they had better things to do than hang out with the parents and decorate a tree. So, she used to invite me over and I would help her and her husband decorate their tree. She made the most yummiest Christmas cookies too (and the best apple pies EVER).

Thanks for bringing that memory up. She moved into a Seniors home earlier this year. I'm gonna have to send her a Christmas card. :thumbsup:

Your's looks way better than mine. Mine's still cooling, so I can't cut into it yet. But I ran into a couple of problems.

1. Even after refrigerating, the dough was way too soft to roll and then move into the pan. So I ended up just pressing it into the pan. The crust looked pretty good after baking it, so I think that it'll end up being fine.

2. When I tried to carmelize the sugar on top, the edge of the crust started to burn before the sugar carmelized. So I had to pull it from the oven before carmelizing. The sugar just continued to melt on the top from the heat of the tart, but it didn't brown.

How do you carmelize the sugar without burning the crust? I had the rack in the middle of the oven. Should I lower the rack, maybe?

I made mine in a pie pan. But it looks like yours was made in a springform. Good idea. Assuming that my test run this morning tastes good, I'm going to make another one to take to my mother-in-law's tomorrow. Maybe I'll try it in the spingform for her place.

I just cut into mine. It tastes great...very tart, mmmmm...but the texture is kinda lumpy. I was worried about over-beating the eggs. I think that I probably under-beat them and now I have chunks of cooked egg whites in it. I mixed the eggs by hand. I'll use a mixer on the next one.

It came out great Bernd. It doesn't look like yours but it's not bad for a first try. I can't thank you enough for sharing it with us. But that, it's a little tricky, comment was a huge understatement. After I rolled it out I couldn't pick it up to put in the pan. It was like trying to lift air. I had to start over and roll it on wax paper. Then I was able to get it in the pan.
FA, I had trouble with the crust burning during the caramelizing also.
Here is what mine looks like. Most is gone though.

1) Do the caramelising under the grill, not in the oven. It might sound funny, but the best results are obtained by using a small blow torch.

2) A square tin is easier to work wirk GM. A round tart looks nicer.

3) I am using a 22cm round tin with a re-movable base. A spring tin will be fine too.

4) FA, make sure that the eggs and sugar are beaten well together, and let the paste rest well in the fridge. Also a good tip is to freeze the tin before you put the pastry in.

I think it's great that you joined in. A real brotherhood spirit.

I was trying to do it in the oven, under the broiler. Had it not been Xmas Eve and the stores closed, I would have run out to a nearby kitchen store for a creme brulee torch before my second attempt.


A square tin is easier to work wirk GM. A round tart looks nicer.

I found the round tin pretty easy to work with, but then I pressed the dough into the tin instead of rolling it. The crust still came out lovely.


I am using a 22cm round tin with a re-movable base. A spring tin will be fine too.

Attempt number two was done in a flan pan with a removable base. It wasn't as deep as the pie pan and came out very nice.

I made the pastry the night before, so it was well chilled but still softened up too much as I was rolling it. The second tart looks like it turned out much better than the first one. Although I can't cut into it until after dinner tonight to know for sure. But it doesn't look lumpy like the first one did.

I love to bake. I'm actually very good at it and am usually asked to supply dessert when we go anywhere for dinner. I even tried to start a cookie business several years ago, but it was too time consuming for very little profit. This is my first try at a custardy type of filling. It was a great experience that I learned some good technique from. We're hosting some friends for NYE this year and I'm already planning to make this dessert for them. I'll buy a small torch before then. :)

Who is responsible for music at different holidays and parties?
